Funny you should write about this–Hubby and I are actually giving up meat two or three times a week now (since December). Mostly this is out of a desire to be healthy–there was a period where we were eating WAY too much of that (and desserts, too), so now we go vegetarian every other day.
I have to say, we’ve both lost weight and I feel more energetic. I’m also discovering a lot more interesting recipes because I have to be creative to make a filling meal out of veggies. I still love meat, but now it’s more of a treat and not a dinner necessity.

I should also add that, after Stacey read this piece, she decided that we should have a Southwest-style salad tonight with a little grilled chicken. If there’s anybody who could teach me to like salad, it’s her.
